The color and flavor of honey vary from region to region and year to
year depending on the bees' nectar source (the blossoms), weather, and
other factors. There are about 300 unique kinds of honey in the United
States, originating from such floral sources as alfalfa, clover, wild flowers,
cactus, and orange blossoms.
A variety of plants, particularly the legume families secrete nectar
to attract pollinating insects. The bees gather the nectar, add enzymes,
evaporate it, and turn it into honey back inside their hives. Bees are
very important to crop production in addition to producing honey
Honey is subject to the whims of nature, like all natural products;
thus, honey varies somewhat in color, flavor, and viscosity from month
to month, year to year. Unlike large commercial honey packers, the
honey we offer is not based on an attempt to blend a variety of honeys
to create uniformity for a certain product, or for a certain color, or
consistency --- a procedure that most retail marketers seem to elect. Uniform
color and flavor, year after year, is virtually proof that many unnecessary
and destructive processes are used to achieve such consistency.
