This was in part due to shortages and in part due to marketing considerations. Since giant companies often use only a very small amount in any one box of cereal, cookie, loaf of bread, etc., the price of honey is not very meaningful to them. They may eventually drive the market price of honey beyond the reach of the average consumer. It is a terrible waste of honey, but nothing will change the trend and, as you probably know, the raw land and plants are finite and only so much quality honey can be produced.
