To preserve the great
raw, natural flavor found in HMS Royal Honey and HMS High Honey, we
insist that handling of the honey is minimized. Apart from barely warming
it enough to get it to flow and straining it a bit, HMS Royal Honey is
as close to taking your spoon to the hive as it is possible to get.
Our honey is never exposed to commercial heating,
high pressure filtering, or worst of all cutting and blending with other
honeys, syrups, or sugars ---- this is just the real thing: natural fresh
harvest mountain honey from high on the slopes and valleys of the
Colorado Rockies.
HMS Crown describes the work to get the
honey packaged for you as minimal handling by which we mean the honey
is always as totally undisturbed as possible. We demand minimal impact
on the honey itself. We, after all, like the real thing too!
To prepare honey, which is collected in drums,
it is warmed slightly in a mountain water bath and then passed through
a simple strainer to remove large impurities such as chunks of wax. It
then flows into a bulk tank where it rests overnight to allow tiny air
bubbles, that can promote crystallization, to float off. The honey is then
gravity fed to the filler, filled into personal sized containers, and stored,
ready to ship to you.
Many large, commercial honey packers heat the
honey to 160 F. or more. They want it superheated which makes honey very
thin and watery. In that watery state they can force pump it, under very
high pressure, through extremely tiny filters --- this is a great aid to
their production, or to prepare it for blending, but the heating and forced
pumping affects the quality, taste, and appearance of any honey treated
in such a rough fashion.
You have only to sample some of the highly processed
generic retail type honey to appreciate the vast difference between honey
that has been only slightly warmed and strained versus honey that has been
heavily processed and heated (much less cut with syrups, molasses, and/or
sugars or made artificially with high fructose corn syrups which are closer
to chemicals than to sugars).
When we say HMS Royal Honey is the closest thing
to honey fresh from the hive, we are not kidding. You'll feel like you
are right in the woods with the Pooh Bear and your own honey pot.
