Two or three slices of (mild or sharp) cheddar cheese
6 eggs at room temperature
1/4 to 3/4 teaspoon salt to taste
1/4 to 3/4 teaspoon black pepper
1/3 cup cream or milk with cream (please use whole
milk)
3 tablespoons of butter (or coconut oil)
Seasonings -- cayenne pepper, garlic powder, ginger, Italian or whatever
you prefer
What to do:
Clean and chop about one half of a small green cabbage
(or red cabbage; or both), dice the cabbage into bite size pieces
or smaller as desired.
Heat a seasoned iron skillet and add two tablespoons
of virgin organic coconut oil (be sure it is not some horrible de-odorized
product that doesn't even have a grand coconut aroma -- if it isn't fresh
smelling, never use it). When the coconut oil is melted, spread it across
the bottom of the pan by tilting the pan, then add the diced cabbage.
Cover the skillet so that the cabbage cooks pretty
rapidly.
When you can see that some portions of the cabbage
are getting a bit translucent, immediately add cheese to cover cabbage
and prepare the King's Scramble as shown below:
Crack eggs into a stainless steel or glass mixing
bowl. Do not use as a small bowl which will make it hard for your to stir
the eggs.
Stir eggs slightly until both yolks and whites are
barely broken and lightly mixed (do not beat or over mix).
Add salt, pepper, seasonings, cream, and mix well.
In the second pan, melt butter or coconut oil until
it lightly sizzles.
Add eggs to the hot skillet; reduce heat to medium
low. Stir eggs slightly. As they begin to turn a golden brown and
become firm, use spatula to lift the eggs from the bottom.
When the King's Scramble is complete, remove enough
of the cooked cabbage and cheese to cover the bottom of the
serving
plates, and serve the King's Scramble
on top the cooked cabbage. Tomato slices make an excellent garnish for
the calcium and protein rich dish.
Variations:
Add one apple, one small onion, or four chopped garlic
cloves to cabbage about midpoint in the cooking.... you can select one,
two, or three of these for interesting taste variations
Substitute any other cheese for the Cheddar (the
King prefers a sharp Cheddar, but the Queen will not hear of any except
mild).
Garnish the plate with apple chunks and garnish the
cheese with thinly sliced apple.
