Use two
skillets.
Melt butter in both. Prepare King's Scramble, below, and about five minutes
before the scramble finishes, then add fresh clean mushrooms of your choice
to the other hot, buttered skillet --- stir the mushrooms occasionally.
When the eggs are finished, and the mushrooms are hot and darkened a bit,
pour the mushrooms over the eggs.
The King's Chef does not approve of canned
products but he does know that some homemakers may warm up mushroom soup
(be sure the soup does not have anti health MSG * as an ingredient) and
pour a little warm soup over the eggs and fresh mushrooms. If you do this
sort of thing, please do not mention it to the Chef. He would prefer that
you make your own roux, a white sauce. to which you can add mushrooms and
make your own version of mushroom soup.
What you will need:
Two pans -- a small one for mushrooms, one for eggs
about two cups of mushrooms (the mushroom can be
diced, sliced, halved or whole or a combination to suit your preferences)
Two or three slices of (mild or sharp) cheddar cheese
6 eggs at room temperature
1/4 to 3/4 teaspoon salt to taste
1/4 to 3/4 teaspoon black pepper
1/3 cup cream or milk with cream (please use whole
milk)
3 tablespoons of butter (or coconut oil)
Seasonings -- cayenne pepper, garlic powder, ginger, Italian or whatever
you prefer
What to do:
Melt butter in both skillets. Prepare the scramble
as shown below.
When the eggs are cooking, put the mushrooms into
the other skillet and stir occasionally.
King's Scramble
Crack eggs into a stainless steel or glass mixing
bowl. Do not use as a small bowl which will make it hard for your to stir
the eggs.
Stir eggs slightly until both yolks and whites are
barely broken and lightly mixed (do not beat or over mix).
Add salt, pepper, seasonings, cream, and mix well.
In the second pan, melt butter or coconut oil until
it lightly sizzles.
Add eggs to the hot skillet; reduce heat to medium
low. Stir eggs slightly. As they begin to turn a golden brown and
become firm, use spatula to lift the eggs from the bottom.
When the King's Scramble is complete, Serve the
eggs, then spread the sautéed mushrooms over the eggs.
Variations:
Add cheese and melt under broiler
Garnish with finely diced onion, pepper, garlic,
or, thin slices of squash.
* Many prepared foods have additives. MSG (monosodium
glutamate), in the opinion of the King's Chef, is not good for living creatures
such as you, other humans, and especially not for young children
