Queen's Peru Scramble
What you need:

1/2 pound ground sirloin steak
-
3 tablespoons grated cheese
-
4 tablespoons butter
-
4 eggs beaten (Use up to twelve eggs for more guests,
increase the other ingredients according to taste.... practice makes perfect)

1/8 teaspoon black pepper to taste
-
1 cup diced tomato
-
1/4 teaspoon Worcestershire sauce, or similar
What to do:
-
Cook ground sirloin in butter until thoroughly done
and brown
-
Scatter three tablespoons cheese over the cooked
beef.

In a bowl combine eggs, pepper, Worcestershire, and
tomatoes and mix well
-
Pour over sirloin in the skillet in which it cooked
-
Serve with warm corn tortillas and a side of papaya,
pineapple, or fresh tomato slices.

This can also be served rolled into warm tortillas.
-
You can dice warm tortillas and mix them into the
finished dish before serving it.
