Prepare mashed potatoes and reserve. When
the mashed potatoes are nearly ready, prepared the King's Scramble. Cover
the serving plate with mashed potatoes, then cover the potatoes with the
scramble. Garnish with bell peppers and diced cheese.
Mashed potatoes are easily prepared. Just
wash two or three medium potatoes, put them in a small sauce pan, cover
with water, add a little salt, and bring to slow boil until tender (test
them with a fork). When tender, remove from water, place in a bowl and
mash with a fork or potato masher. You can add spices to the potatoes as
they are being mashed. The queen generally adds a little butter, white
pepper, a bit of salt, ginger powder, and a dash of cayenne pepper while
mashing potatoes (or you can add liquids, such as broth, whole milk, or
cream). Experiment and you will discover many ways to prepare and present
mashed potatoes. You can also make mashed potatoes by using baked potatoes
... there is a distinct taste difference between the baked flavor versus
the boiled flavor; both are delicious.

Scramble below.
the King's Scramble
What you will need:
6 eggs at room temperature
1/4 to 3/4 teaspoon salt to taste
1/4 to 3/4 teaspoon black pepper
1/3 cup cream or milk with cream (please use whole
milk)
3 tablespoons of butter (or coconut oil)
Seasonings -- cayenee pepper, garlic powder, ginger, Italian or whatever
you prefer
What to do:
Crack the eggs into a stainless steel or glass mixing
bowl. Do not use as a small bowl which will make it hard for your to stir
the eggs.
Stir eggs slightly until both yolks and whites are
barely broken and lightly mixed (do not beat or over mix).
Add salt, pepper, seasonings, cream, and mix well.
Melt butter or coconut oil until it lightly sizzles
in skillet ( the King's cook prefers steel or well seasoned iron pans but
never, never teflon pans)
Add eggs to the hot skillet; reduce heat to medium
low. Stir eggs slightly. As they begin to turn a golden brown and
become firm, use spatula to lift the eggs from the bottom.
Serve eggs as soon as the eggs
are fairly firm throughout but not "dried out."
Optional Serving Suggestions:
Garnish eggs with one apple cut into quarters and
then halved.
Serve with a strip or two of fresh green jalapeño.
You can have a delcious and nutritious breafast
for less than a dollar a serving.
Variations
The King really likes this recipe with:
eight eggs instead of six
crisp bacon
ham
wild harvest salmon
or almost any fresh fruit or berries (not necessarily
all at one meal)
