This chili recipe can be reduced by one-half, or made as one-quarter of the original. It can also be doubled easily. What you need:

Add beans, if used, during last hour; beans are optional. If you prefer to test a milder version for openers, cut the spices by one-half and omit the jalapeño. Great with rice on the side or poured over rice. Serve as desired with cheese, olives, chopped onions and garlic, etc. Chili always goes well with crackers or hot biscuits and, of course, was made to pour over cornbread (the King has a nephew, commonly known as the Prince of Squaw Mountain, Texas, who pours chili over oats, even Cheerios ... but we do not mention him). If preparing this chili at home instead of in the wilderness, you can brown the meat, onions, and garlic in oil, then add the water; bring to slow boil for five minutes. Remove from heat, cool, then refrigerate overnight. The next day, most of the animal fat/grease will have risen to the top of the pot and will be solidified over the top of the liquid. Remove the grease with a spatula or spoon, and then re-heat and continue as above with remaining ingredients.
