fun, not diet!
The King's Beef Piggy Pudding
What you need:
1 pound of ground sirloin
1 package of ground turkey Italian
sausages
1 yellow onion, large, diced
2 or 3 Delicious apples diced
into large chucks
1 batch of cornbread of your
choice , adding 1 tablespoon sugar to the cornbread
1/2 teaspoon cayenne pepper
(or spices of your choice, the Queen always seems to somewhat prefer ginger
over peppers)
What to do:
Mix meat together with selected
spices and the diced onion.
Brown the meat and onion, drain
any excess grease, and place it in a large casserole dish.
The King's chef uses a large
Dutch oven to cook the meat, drains the fat off, and uses the same Dutch
oven for the final baking. It saves one pan and the Dutch oven can go straight
to the serving table if desired.
Add cut up apples to the meat
and stir to mix well.
Mix up a batch of any cornbread
mix (adding 1 extra tablespoon sugar) and pour over the meat and apples.
Bake in 400 degree oven for about
20 to 25 minutes until corn bread is finished and golden brown.
The King likes this dish served
with scrambled eggs on the side. Serving this with warm real maple syrup,
room temperature organic Agave, room temperature Royal
Honey.
If you are really lucky and can
get it, try Choke Cherry Jelly from the high Rocky Mountains --- this special
treat is largely restricted to folks living up in the mountains and it
is hard to beat for a very special treat.
