Piggy Pudding
What you need:
1/2 pound ground sirloin
1/2 pound hot sausage (you can use regular
if you wish)
4 to 5 Gala apples, peeled, cored, and sliced
or chunked (Delicious will do if Gala is not available).
Optional ingredients are:
1 teaspoon cayenne pepper
1 teaspoon jalapeño pepper
and/or
2 teaspoons ginger
You can substitute spices of your choice for
any of the pepper or ginger. The peppers and ginger can be combined if
desired.
Warm maple syrup, warm blackstrap molasses,
room temperature honey, or room temperature agave when serving.
What to do:
Preheat oven to 450 degrees F.
Sprinkle spices of choice over the meats.
Mix the meat thoroughly together.
The Queen likes to add two teaspoons of
ginger powder instead of the cayenne or jalapeño peppers. A little
oregano will put a bit of pizza spin on the flavor.
Cook the meat mixture in a skillet until done,
drain fat.
Prepare, but do
not cook, cornbread
mix, make enough mix for a frying pan full of cornbread. Reserve the uncooked
cornbread
Cover a large baking dish bottom with the cooked
meat mixture (or if you used a large deep frying pan you can use it instead
of a baking dish).
Layer chunked apples on top.
Pour corn bread batter over all. place in
hot oven, and bake for approximately 30 minutes or until corn bread is
done.
You will win extra
kudos serving this with warm real maple syrup,
warm genuine blackstrap molasses, room temperature organic agave, or room
temperature Royal Honey
from the high Rocky Mountains.
Garnish with fresh sage or with a mixture of
ginger and apples or orange slices or quarters.
The King prefers to use a large deep iron Dutch
oven, deep iron frying pan, or an iron casserole for cooking the meat and
then baking this dish.
If compliments make you feel younger, this is a great anti aging
recipe.
