The King's Christmas Feast

The Feast Relish
Cranberry Orange Papaya Relish
You'll need
two large oranges
four cups of fresh cranberries
1/2 of a small Hawaiian papaya
one quarter of a lime (you can use lemon)
one and one-half cups of honey.
First Cut oranges into eighths, remove all seeds. Reserve pulp and rind.
Second. Squeeze the quarter of a lime and reserve the juice.
Third. Use a food processor, or grinder (or dice away with a good kitchen
knife) to reduce orange (including the rind) along with cranberries and
the peeled and diced papaya into a pulp (at least reduce it to bite sized
pieces).
Reserve the pulp in a large cup or small bowl.

Fourth Add juice from the lime to the pulp. Mix well.
Fifth. Add honey (the best honey, of course, is HMS
Crown's Royal Honey). Mix well again. You can store this in individual
servings to chill or just pack it in a covered container until you are
ready to serve.
This is best made the day before, or several hours before so that it
can be thoroughly chilled.
