Mick's Dublin Apple Pie
Two pie crusts (see recipe at this link) 1/2 cup of honey 1 teaspoon of grated lemon rind 1/2 teaspoon of salt 3 and 1/4 cups sliced apples, more or less (This will vary according to how you chunk or dice the apples) One teaspoon cinnamon 1/2 cup of sugar 1/3 cup of corn starch About three tablespoons of butter What to do:
Place the bottom crust into your pie pan and fit it to the edges and bottom of the pan. Then spoon the mixed ingredients into the pastry crust in the pie pan. Dot the ingredients with butter. Place the top crust
over the ingredients and over the edges of the pie pan.
Then use the flat edges of the tines of a fork to press the edges tightly together (this will leave a series of hash marks all along the edges of the pie pan where the tines have pressed the two crusts together to make a good seal or a good pastry case. Use a sharp knife to slash four or five small slits in the top crust so that steam can escape during the baking process. Be sure the oven is fully pre-heated before you start. Bake at 425 F for ten minutes, to set the crust, then reduce heat to 350 F and bake for 30 to 35 minutes longer. This pie is fabulous with a strong cup of tea.
Excellent with thick real cream, with hot or melted cheese over the pie You can try the same recipe with added raisins, or with nutmeg as additional seasoning.
