Happy St. Patrick's Day
St. Pat's Festival Bread
4 tablespoons of melted butter 3 cups of all purpose flour 1 tablespoon of fresh baking powder 1 cup of granulated white sugar 2 cups of raisins (light or dark) 2 beaten eggs (beat eggs separately before use) 1 cup of whole milk Cinnamon and sugar generously sprinkled over the top of the loaf. What to do:
Cover the raisins with water in a saucepan, bring to a boil, turn off heat and let stand for ten minutes. Sift 3 cups of flour and 1 tablespoon of baking powder together, then sift again (double sifted). This process adds air to the flour mixture for a lighter texture. Add the remaining dry ingredients to the sifted flour and mix well using a large spoon. Be sure your mixing bowl is large enough. Drain boiled raisins, discard the water, then the stir raisins into the flour, mixing well. Beat 2 eggs together then add one cup of milk to the beaten eggs. Beat the eggs and milk together, then blend thoroughly into the dry ingredients. Blend four tablespoons of melted melted butter into the mixture. Spoon the mixture into a greased 10" glass pie plate. You can use regular loaf pans or something comparable. ![]() Sprinkle a generous amount of cinnamon and sugar over the top to suit. Place in the oven to bake at 350 degrees for ten minutes, then turn oven down to 250 degrees for 40 minutes. This loaf is excellent with coffee or tea.
