Happy St. Patrick's Day
Irish Tea Scones
1/2 cup of butter 4 cups of flour 2 teaspoons of baking powder (fresh) 1/2 teaspoon of salt 1/4 cup of sugar 1 egg 1 cup of milk (approximately) What to do:
Cut the butter into the flour. Add the baking powder, salt, and sugar, then mix well. Beat the egg and add to the milk. Mix well. Mix the milk-egg liquid into the dry ingredients to make dough. Quickly and lightly shape the dough into a ball, flatten it and then roll out to about one inch thick. Cut into round shapes with a pastry cutter (the shape does not have to be round, but round is traditional) The Chef's Grandmother always used a can (similar to a small Vienna Sausage can) with both ends removed to cut biscuits and scones. Arrange the scone rounds on a lightly floured baking sheet. Bake at 425 until toasty brown around 12 to 15 minutes. Yield about 18 scones. Hot scones and freshly made tea can put you on the road to a fabulous tradition for family and friends. It is a rare family or an odd friend who does need some quality tea time .... and as tour Irish Grandmother said, " ... if you want to do something, begin NOW!"
