Happy St. Patrick's Day
Irish Tea Time
Boy, they say the Irish can drink and I suppose they can!! It is said they are the largest tea drinking group per capita on the planet. The Irish take their tea seriously. Tea is more in evidence in Ireland than coffee and coke in the US. And these folks take their tea pretty much on schedule beginning at eleven in the morning, three to five for afternoon tea, and the so called “high tea” at six in the evening. High tea is the evening meal and whereas the afternoon tea can be more of a “high tone” or fancy tea where you expect scones, breads, jam, pie, cakes, and candies. The Irish tend to like their tea strong and the brew can be and is usually diluted with milk or cream or both up to a fourth or third of the cup before the tea is added. A rich blend of Assam and Ceylon tea is popular with the wealthy and with the poor alike and they both honor their tea time which is really a necessary and wonderful part of their social fabric. In the mid eighteen hundreds the working class and poor of Ireland could ill afford tea or sugar but they managed to get their tea, in many cases, by trading their cottage butter and eggs for tea and sugar. A splendid traditional Irish Tea blessing:
