Hurry Up Lover's Cake
For Valentine's Day
The King's Chef is providing a basic recipe that will be easy for any
lover to quickly make a wonderful cake for his or her Valentine.
A commercial cake mix an exception in deference to making it as
easy as possible for all concerned.
For the cake you will need:
1 marble cake mix (a pre-mix cake box purchased at the market)
2 pounds of ricotta cheese
4 beaten eggs (eggs and yolks beaten together)
1 teaspoon real vanilla extract
3/4 cup granulated sugar
First: Beat ricotta cheese, eggs, vanilla and sugar together
and set aside.
Second: Make 1 package marble cake mix, mix as directed on the
box, then pour the cake mix into a 13" x 9" x 2" pan.
Third, Spread the ricotta cheese mixture over the cake batter.
Fourth: Bake at 350 degrees for 1 hour until toothpick comes
out clean.
Fifth, set cake aside to cool.
For the cake frosting you will need:
1/2 cup real butter at room temperature
1 eight-ounce package of cream cheese, softened at room temperature
4 cups powdered sugar
3/4 teaspoon vanilla extract
1 cup chopped pecans (lightly toasted--toasting is optional).
First: Cream the butter and cheese together. Continue mixing
while gradually adding sugar and vanilla. Beat until smooth and creamy.
Second: The pecans can be mixed into the finished frosting before
it is applied to the cooled cake or you apply the icing to the cooled
cake and then sprinkle the pecans over the icing.The cake must be cool
prior to applying the icing.
The Chef adds half the pecans to the icing, mixing them in, and
sprinkles the remaining half over the top of the icing.
Finally, refrigerate the iced cake for at least four hours before
serving --- this excellent cake is a reputation maker and your Valentine
will love it.
